Ingredients

  • 12 pieces cream puffs (store-bought frozen choux, about 12 pieces)
  • ½ cup heavy cream
  • 4 oz dark chocolate, chopped
  • 2 tbsp powdered sugar
  • 1 tbsp butter
  • 2 tbsp whole milk

Instructions

    Thaw cream puffs at room temperature for 5 minutes until slightly soft.

    Heat 0.25 cup heavy cream and the butter in a small saucepan until steaming, about 90 seconds.

    Pour over chopped chocolate and let sit 1 minute, then whisk until glossy ganache forms.

    Whip remaining 0.25 cup heavy cream with powdered sugar until soft peaks form, about 2 minutes.

    Slice puffs in half horizontally, pipe or dollop chocolate cream inside, and sandwich closed.

    Whisk milk into remaining ganache until pourable, then dip top of each éclair to coat and serve immediately.
