Nigerian Grilled Croaker Fish

Ingredients
- 2 fish (1 lb each) whole croaker fish, cleaned and gutted
- 1 medium onion, sliced into rings
- 1 whole scotch bonnet or habanero pepper, halved lengthwise
- 1.5 tbsp fresh ginger, sliced into thin matchsticks
- 3 cloves garlic cloves, minced
- 3 tbsp olive oil
- 1 pinch salt and black pepper to taste

Pat fish dry inside and out with paper towels. Score the skin diagonally on both sides in a crosshatch pattern.

Stuff each fish cavity with onion rings, ginger slices, garlic, and one scotch bonnet half. Season inside and outside with salt and pepper.

Brush fish generously on both sides with olive oil. Preheat grill to high heat, about 10 minutes.

Place fish directly on hot grill grates. Do not move for 5 minutes until skin crisps and chars lightly.

Flip fish carefully. Grill the second side 4-5 minutes until flesh flakes easily at the thickest part near the backbone.

Transfer fish to a plate. Serve hot with lime wedges if desired.
