Nigerian Fried Rice with Chicken

Ingredients

  • 3 cups cooked rice, cooled to room temperature
  • 1.5 cups cooked chicken, diced
  • 1 medium onion, diced
  • 1 medium carrot, diced small
  • 2 tbsp tomato paste
  • 1 whole hot pepper (Scotch bonnet or habanero), minced
  • 3 tbsp vegetable oil

Instructions

    Heat oil in a large skillet over medium-high until shimmering, ~90 seconds.

    Add onion and carrot. Sauté, stirring often, until softened and edges golden, ~4 minutes.

    Stir in tomato paste and minced hot pepper, cooking until fragrant, ~1 minute.

    Add diced chicken and stir until heated through, ~2 minutes.

    Add cooled rice and stir constantly, breaking up clumps, until rice is warm and coated, ~3 minutes.

    Taste and adjust seasoning with salt and pepper.
