Ingredients
- 3 cups cooked rice, cooled to room temperature
- 1.5 cups cooked chicken, diced
- 1 medium onion, diced
- 1 medium carrot, diced small
- 2 tbsp tomato paste
- 1 whole hot pepper (Scotch bonnet or habanero), minced
- 3 tbsp vegetable oil
