Ingredients

  • 4 slices bacon, chopped
  • 1 medium onion, diced
  • 1 lb potatoes, diced into 1/2-inch cubes
  • 1.5 lb cod or haddock, skin removed, cut into 1-inch chunks
  • 1 cup heavy cream
  • 2 cups clam broth or fish stock
  • 1 to taste salt and pepper to taste

Instructions

    Cook bacon in a large pot over medium heat until crispy, ~8 minutes. Remove with a slotted spoon; chop and set aside.

    Add diced onion to the bacon fat and cook until soft, ~5 minutes. Stir occasionally.

    Add diced potatoes and clam broth. Bring to a boil, then reduce heat and simmer until potatoes are tender, ~12 minutes.

    Add fish chunks and heavy cream. Stir gently and simmer until fish is opaque and flakes easily, ~5 minutes.

    Season with salt and pepper to taste. Stir in the cooked bacon.
