Ingredients

  • 2 servings udon noodles
  • 8 oz mixed mushrooms
  • 3 tbsp soy sauce
  • 2 tbsp mirin
  • 1 tbsp vegetable oil
  • 2 stalks green onions

Instructions

  1. 1

Cook the 2 servings udon noodles according to package directions until just tender, about 5-7 minutes. Drain and set aside.

  2. 2

Slice the 8 oz mixed mushrooms and thinly slice the 2 green onions, separating white and green parts.

  3. 3

Heat the 1 tbsp vegetable oil in a large skillet over medium-high heat. Add the mushrooms and white parts of the green onions, cook until mushrooms are golden and browned, about 5-7 minutes.

  4. 4

Stir in the 3 tbsp soy sauce and 2 tbsp mirin, scraping up any browned bits. Let simmer for 1 minute until slightly thickened.

  5. 5

Add the cooked udon noodles to the skillet and toss to coat evenly with the sauce. Cook for 2-3 minutes until heated through.

  6. 6

Serve immediately, garnished with the green parts of the green onions.
