Ingredients
- 2 servings udon noodles
- 8 oz mixed mushrooms
- 3 tbsp soy sauce
- 2 tbsp mirin
- 1 tbsp vegetable oil
- 2 stalks green onions

Cook the 2 servings udon noodles according to package directions until just tender, about 5-7 minutes. Drain and set aside.

Slice the 8 oz mixed mushrooms and thinly slice the 2 green onions, separating white and green parts.

Heat the 1 tbsp vegetable oil in a large skillet over medium-high heat. Add the mushrooms and white parts of the green onions, cook until mushrooms are golden and browned, about 5-7 minutes.

Stir in the 3 tbsp soy sauce and 2 tbsp mirin, scraping up any browned bits. Let simmer for 1 minute until slightly thickened.
