Ingredients
- 16 oz mixed mushrooms
- 1 medium onion
- 1 medium green bell pepper
- 1 medium red bell pepper
- 3 tbsp soy sauce
- 2 tbsp mirin
- 2 tbsp vegetable oil
- 1 tbsp seaweed flakes

Slice the 16 oz mushrooms, 1 onion, and both bell peppers into bite-sized pieces.

In a small bowl, mix 3 tbsp soy sauce and 2 tbsp mirin; set aside.

Heat 2 tbsp vegetable oil in a large skillet or wok over high heat until shimmering.

Add the mushrooms and onion; stir-fry until mushrooms release their liquid and start to brown, about 5-7 minutes.
