Ingredients

  • 16 oz mixed mushrooms
  • 1 medium onion
  • 1 medium green bell pepper
  • 1 medium red bell pepper
  • 3 tbsp soy sauce
  • 2 tbsp mirin
  • 2 tbsp vegetable oil
  • 1 tbsp seaweed flakes

Instructions

    Slice the 16 oz mushrooms, 1 onion, and both bell peppers into bite-sized pieces.

    In a small bowl, mix 3 tbsp soy sauce and 2 tbsp mirin; set aside.

    Heat 2 tbsp vegetable oil in a large skillet or wok over high heat until shimmering.

    Add the mushrooms and onion; stir-fry until mushrooms release their liquid and start to brown, about 5-7 minutes.

    Add the bell peppers and cook until crisp-tender, about 3-4 minutes.

    Pour in the sauce and toss everything to coat; cook for 1-2 minutes until the sauce thickens slightly.

    Remove from heat and sprinkle with 1 tbsp seaweed flakes before serving.
