Mung Bean Porridge

A comforting, creamy porridge made with split mung beans and coconut milk, finished with a sprinkle of sesame seeds. Ready in about 20 minutes, this is a simple and satisfying breakfast or snack.

Ingredients

  • 1 cup split mung beans
  • 3 cups water
  • ½ cup coconut milk
  • ¼ teaspoon salt
  • 1 tablespoon sesame seeds

Instructions

    Rinse the 1 cup split mung beans under cold water until the water runs clear. Drain well.

    In a medium saucepan, combine the rinsed beans and 3 cups water. Bring to a boil over high heat, then reduce to low and simmer, partially covered, until the beans are very soft and starting to break down, about 15 minutes.

    Stir in the 0.5 cup coconut milk and 0.25 teaspoon salt. Cook for another 2-3 minutes, stirring occasionally, until the porridge is thick and creamy. If it's too thick, add a splash of water.

    Ladle the porridge into bowls and sprinkle each with the 1 tablespoon sesame seeds. Serve warm.

    For extra flavor, stir in a pinch of sugar or a drizzle of honey before serving, if you like.
