Ingredients
- ½ cup strong brewed coffee, cooled
- 6 oz mascarpone cheese
- 3 tablespoon granulated sugar
- ¼ teaspoon vanilla extract
- 8 whole ladyfinger cookies (savoiardi)
- 1 tablespoon unsweetened cocoa powder
Instructions
- 1
Pour the cooled coffee into a shallow dish about the size of a cereal bowl.
- 2
Place the mascarpone, sugar, and vanilla extract in a small bowl and whisk together until the mixture looks pale and fluffy, about 1 minute.
- 3
Quickly dip one ladyfinger into the coffee dish for exactly 1 second on each side—it should feel soft but not falling apart—and place it in the bottom of the first mug.
- 4
Repeat dipping and place a second soaked ladyfinger on top of the first one in the same mug.
- 5
Spoon half of the mascarpone mixture on top of the ladyfingers in the first mug, spreading it gently into an even layer.
- 6
Repeat steps 3–5 with the second mug using 2 more dipped ladyfingers and the remaining mascarpone mixture.
- 7
Use a fine-mesh sieve or fine sifter to dust the top of each mug evenly with cocoa powder until you can no longer see the mascarpone layer beneath.
- 8
Serve immediately, or cover and refrigerate for up to 4 hours before serving.
