Ingredients

  • 2 cups all-purpose flour
  • ½ tsp salt
  • ¾ cup warm water
  • ½ cup butter, divided
  • 2 tbsp olive oil
  • ½ cup honey
  • 2 tbsp sesame seeds
  • ¼ tsp cinnamon

    Mix flour and salt in a bowl. Add warm water slowly, stirring until a shaggy dough forms.

    Knead dough on an oiled surface for 5 minutes until smooth and supple.

    Divide dough into 4 equal balls. Brush each with a tiny bit of butter, cover with plastic.

    Let rest at room temperature for 15 minutes until dough relaxes.

    On an oiled work surface, stretch one dough ball into a thin square, almost transparent.

    Spread 1 tbsp melted butter across the dough. Fold into thirds, then fold thirds again to form a square.

    Repeat with remaining dough balls and butter. Let folded squares rest 5 minutes.

    Heat olive oil in a large skillet over medium-high until it shimmers, about 1 minute.

    Pan-fry one msemen until deep golden brown and crispy on the bottom, 3–4 minutes.

    Flip and cook the second side until golden, another 2–3 minutes. Transfer to a plate.

    Repeat with remaining msemen, adding 0.5 tbsp oil between batches if needed.

    Warm honey in a small pot over low heat with cinnamon, 1–2 minutes until fragrant.

    Arrange msemen on a serving plate. Drizzle warm honey over top and sprinkle sesame seeds.

    Serve immediately while still warm and crispy.
