- 8 oz mozzarella cheese
- 2 large eggs
- ½ cup all-purpose flour
- 1 cup breadcrumbs
- ¼ cup olive oil
- 2 tbsp fresh parsley

Cut the mozzarella into 1/4-inch thick slices. Place 4 bread slices on a work surface and divide the mozzarella evenly among them, leaving a small border. Top with the remaining bread slices and press gently.

In a shallow dish, whisk the 2 eggs with the 0.5 tsp salt. Place the 0.5 cup flour in another shallow dish and the 1 cup breadcrumbs in a third.

Dredge each sandwich in the flour, shaking off excess. Dip into the egg mixture, then coat with breadcrumbs, pressing to adhere. Set aside on a plate.

Heat the 0.25 cup olive oil in a large skillet over medium heat. When the oil shimmers, add the sandwiches in a single batch (work in batches if needed) and cook until golden brown, about 3-4 minutes per side.
