Ingredients

  • 8 slices white bread
  • 8 oz mozzarella cheese
  • 2 large eggs
  • ½ cup all-purpose flour
  • 1 cup breadcrumbs
  • ¼ cup olive oil
  • 2 tbsp fresh parsley
  • ½ tsp salt

Instructions

  1. 1

Cut the mozzarella into 1/4-inch thick slices. Place 4 bread slices on a work surface and divide the mozzarella evenly among them, leaving a small border. Top with the remaining bread slices and press gently.

  2. 2

In a shallow dish, whisk the 2 eggs with the 0.5 tsp salt. Place the 0.5 cup flour in another shallow dish and the 1 cup breadcrumbs in a third.

  3. 3

Dredge each sandwich in the flour, shaking off excess. Dip into the egg mixture, then coat with breadcrumbs, pressing to adhere. Set aside on a plate.

  4. 4

Heat the 0.25 cup olive oil in a large skillet over medium heat. When the oil shimmers, add the sandwiches in a single batch (work in batches if needed) and cook until golden brown, about 3-4 minutes per side.

  5. 5

Transfer the sandwiches to a paper towel-lined plate to drain. Sprinkle with the 2 tbsp chopped parsley and serve hot, with extra grated cheese if desired.

  6. 6

For extra flavor, add a pinch of garlic powder or dried oregano to the breadcrumbs before coating.
