Ingredients

  • ¾ cup ghee (clarified butter)
  • 2 cups gram flour (besan)
  • 1 cup powdered sugar
  • 6 whole green cardamom pods
  • ½ cup raw cashews, finely chopped
  • ¼ cup milk solids (mawa), grated or crumbled

Instructions

  1. 1

Crush cardamom pods lightly to release seeds; discard husks. Grind seeds to powder using a spice grinder or mortar.

  2. 2

Heat ghee in a large heavy skillet over medium. Add gram flour and stir constantly until fragrant and light golden, ~8 minutes.

  3. 3

Remove from heat. Cool for 5 minutes, then stir in powdered sugar, cardamom powder, cashews, and mawa until well combined.

  4. 4

Once cool enough to handle, roll mixture into 1-inch balls. If too soft, refrigerate for 10 minutes and try again.

  5. 5

Arrange ladoos on a plate and refrigerate for 15 minutes until firm.

  6. 6

Serve at room temperature. Store in an airtight container for up to 2 weeks.
