Ingredients
- 1 whole ciabatta roll or sandwich roll, halved lengthwise
- 4 oz mortadella, sliced thin
- 1.5 cups fresh arugula
- 2 tbsp butter, softened
- ½ whole lemon
- 2 oz provolone or fontina, sliced

Mix softened butter with lemon zest and a squeeze of lemon juice in a small bowl.

Heat a large skillet over medium-high heat. Toast ciabatta cut-side down until golden and crispy, about 2 minutes.

Spread lemon butter on the warm cut sides of the ciabatta.
