Ingredients

  • 1 whole ciabatta roll or sandwich roll, halved lengthwise
  • 4 oz mortadella, sliced thin
  • 1.5 cups fresh arugula
  • 2 tbsp butter, softened
  • ½ whole lemon
  • 2 oz provolone or fontina, sliced

Instructions

    Mix softened butter with lemon zest and a squeeze of lemon juice in a small bowl.

    Heat a large skillet over medium-high heat. Toast ciabatta cut-side down until golden and crispy, about 2 minutes.

    Spread lemon butter on the warm cut sides of the ciabatta.

    Layer mortadella and cheese on the bottom half. Top with arugula and season with salt and pepper.

    Close the sandwich and slice in half. Serve warm.
