- 2 teaspoons baking soda

- 1 teaspoon ground cinnamon
- ¾ cup unsalted butter
- 1 cup brown sugar
- ¼ cup molasses
- ¼ cup granulated sugar

In a large bowl, beat 0.75 cup softened butter and 1 cup brown sugar until light and fluffy, about 2 minutes.

Beat in 1 large egg and 0.25 cup molasses until well combined.

Gradually add the flour mixture to the wet ingredients, mixing until just combined. The dough will be stiff.

Roll dough into 1.5-inch balls, then roll each ball in 0.25 cup granulated sugar to coat.

Place balls 2 inches apart on prepared sheets. Bake until cookies are puffed and cracked, about 10-12 minutes. Cool on sheets for 5 minutes, then transfer to a wire rack.
