Ingredients
- 2 large (about 1 lb) chicken breasts, boneless & skinless
- 1 whole orange
- 1 whole lime
- 4 cloves garlic
- 2 medium fresh tomatoes
- 1 tsp cumin

Juice the orange and lime. Mince the garlic. Stir juice, garlic, cumin, 2 tbsp oil, and salt together.

Pat chicken dry. Pound each breast to even ½-inch thickness between plastic wrap.

Coat chicken with mojo marinade on both sides. Let sit 5 minutes while you slice tomatoes.

Heat a skillet over medium-high until it shimmers. Lay chicken flat, don't move for 4 minutes until golden.

Flip chicken once. Cook 3–4 minutes more until cooked through and edges look charred.
