Ingredients
- 8 oz green beans
- 4 eggs
- 6 cups mixed salad greens
- 4 radishes
- 3 tbsp olive oil
- 1 tbsp red wine vinegar
- 1 tsp Dijon mustard
- 1 pinch salt and pepper

Place the 4 eggs in a small pot, cover with water, bring to a boil, then turn off heat and let sit 9 minutes. Drain and cool under cold water, then peel and halve.

Trim the 8 oz green beans and pat dry. Heat 2 tbsp olive oil in a large skillet over medium-high until shimmering.

Add the green beans in a single layer and fry, turning occasionally, until blistered and tender, about 6-8 minutes. Season with salt and pepper.

In a small bowl, whisk the remaining 1 tbsp olive oil, 1 tbsp red wine vinegar, 1 tsp Dijon mustard, and a pinch of salt and pepper until combined.
