Miso-Glazed Salmon with Sesame Bok Choy

Ingredients

  • 4 salmon fillets, skin on
  • 3 tbsp white miso paste
  • 2 tbsp maple syrup
  • 1 tbsp rice vinegar
  • 1 tbsp soy sauce
  • 1 tsp fresh ginger, grated
  • 4 baby bok choy, halved lengthwise
  • 1 tbsp toasted sesame oil
  • 1 tbsp sesame seeds

Instructions

    Position an oven rack about 6 inches from the broiler and heat the broiler to high. Line a sheet pan with foil.

    Whisk the miso, maple syrup, rice vinegar, soy sauce, and ginger together until smooth.

    Pat the salmon dry and place skin-side down on the sheet pan. Brush generously with the glaze. Broil for 7 to 9 minutes, until the glaze is bubbly and dark in spots and the salmon flakes easily.

    While the salmon broils, heat the sesame oil in a wide skillet over medium-high. Add the bok choy cut-side down and let it sear for about 2 minutes.

    Flip the bok choy, splash in 2 tablespoons of water, and cover for another minute or two until the stems are tender. Plate alongside the salmon and scatter sesame seeds over both.
