Ingredients
- 8 count flour or corn tortillas (6-inch)
- 1.5 cups shredded cheese (cheddar, Oaxaca, or Monterey Jack)
- 2 tablespoons butter
- 1 pinch salt and black pepper to taste

Heat butter in a 10-inch skillet over medium heat until foaming, about 1 minute.

Place one tortilla in the skillet and sprinkle about 3 tablespoons cheese over half of it.

Fold the tortilla in half over the cheese. Cook 2 minutes until the bottom edges turn golden brown.

Flip the quesadilla and cook the other side 1–2 minutes until the cheese melts and visible through tortilla.

Transfer to a plate. Repeat with remaining tortillas and cheese, wiping out skillet if butter browns.

Cool 1 minute. Season with salt and pepper. Serve warm.
