Ingredients

  • 2 lbs large shrimp, peeled and deveined
  • ⅓ cup olive oil
  • 3 tablespoons fresh lemon juice
  • 5 cloves garlic cloves, minced
  • 1.5 teaspoons ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground coriander
  • ¼ teaspoon cayenne pepper
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ cup tahini sauce
  • ⅓ cup fresh parsley, chopped
  • ¼ cup fresh mint, chopped
  • 1 lemon lemon wedges

Instructions

  1. 1

In a large bowl, whisk together olive oil, lemon juice, minced garlic, cumin, paprika, coriander, cayenne, salt, and pepper.

  2. 2

Add shrimp to the marinade and toss to coat evenly. Cover and refrigerate for 20 minutes.

  3. 3

Preheat grill to medium-high heat (400°F). Oil the grates lightly to prevent sticking.

  4. 4

Thread shrimp onto skewers, leaving small gaps between each piece for even cooking.

  5. 5

Grill shrimp for 2-3 minutes per side until pink and cooked through, about 5-6 minutes total.

  6. 6

Transfer to a serving plate and let rest for 2 minutes.

  7. 7

Drizzle tahini sauce over grilled shrimp and garnish with fresh parsley and mint.

  8. 8

Serve immediately with lemon wedges on the side.
