Ingredients

  • 2 whole large eggs
  • 2 tablespoons whole milk
  • ¼ cup shredded cheddar cheese
  • 3 tablespoons diced ham (or cooked bacon)
  • ⅛ teaspoon salt
  • 0.06 teaspoon black pepper

Instructions

  1. 1

Crack both eggs into a microwave-safe mug (at least 12 ounces; a standard coffee mug works fine). Add 2 tablespoons of milk.

  2. 2

Using a fork, whisk the eggs and milk together vigorously for 20 seconds until completely combined and no streaks of white or yolk remain.

  3. 3

Stir in 0.25 cup shredded cheddar cheese, 3 tablespoons diced ham, 0.125 teaspoon salt, and 0.0625 teaspoon black pepper until evenly distributed.

  4. 4

Microwave the mug uncovered on high power for 90 seconds, until the mixture is mostly set on top but still jiggles slightly in the very center when you gently shake the mug.

  5. 5

Remove the mug from the microwave using a towel (the handle will be hot). Stir gently with a fork for 10 seconds to break up any large curds and create a creamy texture.

  6. 6

Let the mug cool for 30 seconds, then eat directly from the mug or slide the eggs onto a plate. Serve hot.
