Ingredients

  • 3 large egg whites
  • ¾ cup sugar
  • 1 cup heavy cream
  • 2 cups mixed berries
  • ¼ cup berry jam
  • 1 tbsp lemon juice

Instructions

  1. 1

Preheat oven to 225°F. Line a baking sheet with parchment paper.

  2. 2

Beat 3 egg whites with a pinch of salt until soft peaks form, about 2 minutes. Gradually add 3/4 cup sugar, beating until stiff, glossy peaks form, about 5 minutes.

  3. 3

Spoon the meringue into 4 mounds on the prepared sheet, making a well in each center. Bake until dry and crisp, about 1 hour 15 minutes. Turn off oven and let cool inside for 1 hour.

  4. 4

In a small saucepan, warm 1/4 cup berry jam with 1 tbsp lemon juice over low heat until smooth, about 2 minutes. Let cool slightly.

  5. 5

Whip 1 cup heavy cream with 1 tbsp sugar until soft peaks form, about 3 minutes.

  6. 6

Place each meringue on a plate. Fill the wells with whipped cream and top with 2 cups mixed berries. Drizzle with the berry sauce and serve immediately.
