Ingredients

  • 1 can (28 oz) canned crushed tomatoes
  • 1 cup vegetable broth
  • 1 medium onion, yellow
  • 3 whole garlic cloves
  • ¼ cup, roughly chopped fresh basil
  • 2 tablespoons olive oil
  • 1 to taste salt and pepper

    Slice the onion in half lengthwise from root to tip, then place flat-side down and slice crosswise into thin half-rings about 1/8 inch thick.

    Mince the garlic cloves until the pieces are smaller than a grain of rice—about the size of pencil-tip dots.

    Pour 2 tablespoons of olive oil into a medium pot and set the heat to medium-high. Wait about 90 seconds until the oil shimmers and slides quickly when you tilt the pot.

    Add the sliced onion to the hot oil and stir once every 30 seconds until the onion pieces turn soft and light golden in color, about 4 minutes.

    Add the minced garlic and stir constantly for 30 seconds until the kitchen smells strongly fragrant.

    Pour in the entire can of crushed tomatoes and 1 cup of vegetable broth. Bring to a gentle simmer—you should see small bubbles breaking the surface continuously.

    Let the soup simmer gently for 8 minutes, stirring occasionally, until the flavors have melded together.

    Remove the pot from heat and carefully pour half the soup into a blender (work in batches if needed). Blend on medium speed until completely smooth, about 30 seconds, then pour the blended soup back into the pot.
