Ingredients
- 1.5 lb large shrimp, peeled and deveined
- 3 tbsp olive oil
- 4 cloves garlic, minced
- 1 tsp dried oregano
- 2 whole lemon, divided (zested + juiced, plus 1 whole for skewers)
- 1 whole red bell pepper, cut into 1-inch chunks
- 1 pinch salt and pepper to taste
- 2 tbsp fresh parsley or dill, chopped (optional garnish)
