Ingredients

  • 1.5 lb large shrimp, peeled and deveined
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 tsp dried oregano
  • 2 whole lemon, divided (zested + juiced, plus 1 whole for skewers)
  • 1 whole red bell pepper, cut into 1-inch chunks
  • 1 pinch salt and pepper to taste
  • 2 tbsp fresh parsley or dill, chopped (optional garnish)

Instructions

    Whisk olive oil, garlic, oregano, lemon zest, lemon juice, salt, and pepper in a bowl.

    Add shrimp to the marinade and toss until coated. Let sit 10 minutes at room temperature.

    Cut the extra lemon into 8 wheels. Soak wooden skewers in water if using.

    Thread shrimp, bell pepper chunks, and lemon wheels alternately onto skewers.

    Heat grill or grill pan to medium-high (you should feel heat 2 inches above the surface).

    Grill skewers 2 minutes per side without moving until shrimp turn pink and char slightly.
