Ingredients

  • 1 cup hummus
  • 2 pieces whole wheat pita bread
  • 1 medium cucumber
  • 1 cup cherry tomatoes
  • ¾ cup Kalamata olives
  • ½ cup crumbled feta cheese

    Place a small bowl on a large plate or shallow platter and spoon the 1 cup hummus into it, so it sits in the center.

    Cut the pita bread in half, then cut each half into three wedges, creating six triangle pieces. Arrange them around the hummus.

    Hold the cucumber upright on a cutting board and slice it in half lengthwise, from tip to root, creating two long halves.

    Lay each cucumber half flat with the cut side down, then slice crosswise into half-moon pieces about 1/4 inch thick.

    Rinse the cherry tomatoes and pat them dry with a paper towel, then arrange both the cucumber pieces and tomatoes on the platter around the hummus.

    Pour the 0.75 cup Kalamata olives into a small bowl and place it on the platter next to the hummus, so guests can use the pit.
