Ingredients

  • 2 cans (15 oz each) canned lentils, drained and rinsed
  • 1 medium cucumber, diced
  • ¾ cup feta cheese, crumbled
  • 1 whole lemon (juiced)
  • 3 tbsp olive oil
  • 1 pinch salt and pepper to taste

    Drain and rinse the canned lentils in a fine-mesh strainer until water runs clear.
