Ingredients

  • 2 cans (15 oz each) canned chickpeas, drained and rinsed
  • 1 medium cucumber, diced
  • 1.5 cups cherry tomatoes, halved
  • ¼ cup red onion, finely diced
  • 1 whole lemon, juiced
  • 3 tbsp olive oil

Instructions

    Dice the cucumber into 1/2-inch pieces and halve the cherry tomatoes.

    Finely dice the red onion into small pieces.

    In a large bowl, combine drained chickpeas, cucumber, tomatoes, and red onion.
