Ingredients
- 1.5 lb ground beef
- 8 oz mushrooms
- 1 medium onion
- 1 large egg
- ½ cup breadcrumbs
- ¼ cup ketchup
- 1 head broccoli
- 2 tbsp olive oil

Preheat oven to 375°F. Finely chop the 1 onion and 8 oz mushrooms. Cut the 1 head of broccoli into florets.

Heat 1 tbsp olive oil in a skillet over medium heat. Add onion and mushrooms, cook until soft and browned, about 8 minutes. Set aside to cool slightly.

In a large bowl, combine the ground beef, egg, breadcrumbs, 2 tbsp ketchup, and the cooked mushroom mixture. Mix until just combined.

Shape the mixture into a loaf and place in a baking dish. Spread the remaining 2 tbsp ketchup over the top.

Bake for 35-40 minutes, until the internal temperature reaches 160°F and the top is caramelized.

While the meatloaf bakes, toss broccoli with remaining 1 tbsp olive oil and a pinch of salt. Roast on a sheet pan for 20 minutes, until tender and edges are crisp.
