Massachusetts Baked Cod

Ingredients
- ¾ lb cod fillets, skin-on or skinless
- 3 tablespoons butter
- ½ cup saltine crackers
- 2 tablespoons fresh parsley, finely chopped
- ¼ teaspoon salt
- ⅛ teaspoon black pepper

Set the oven to 400°F and wait until the indicator light or beep tells you it has finished heating, about 8 minutes.

Place the cod fillets on a sheet of parchment paper, leaving 2 inches of space between each fillet so they cook evenly.

Break the crackers into pieces roughly the size of peas, then place them in a small bowl and crush them gently with your fingers until they look like coarse breadcrumbs, about the texture of wet sand.

Stir the crushed crackers, parsley, salt, and black pepper together in a small bowl until evenly mixed throughout.

Cut the butter into small pea-sized pieces and scatter them evenly over the top surface of each cod fillet.

Press the cracker mixture onto the top of each fillet, using about 2 tablespoons per fillet so it sticks to the butter and covers the surface like a thin golden blanket.

Slide the baking sheet into the preheated oven and bake for 12 to 15 minutes, until the topping turns the color of light honey and the fish flakes apart when you poke it gently with a fork.
