Ingredients
- 1.5 lb potatoes
- 4 slices bacon
- 1 large onion
- 2 tbsp butter
- ¼ cup milk
- ½ tsp salt

Peel and chop the 1.5 lb potatoes into 1-inch cubes. Place in a pot, cover with cold water, add a pinch of salt, and bring to a boil. Cook until fork-tender, about 15 minutes.

While potatoes cook, chop the 4 bacon slices into small pieces and cook in a skillet over medium heat until crispy, about 6 minutes. Remove bacon with a slotted spoon, leaving the fat in the pan.

Thinly slice the 1 large onion and add to the bacon fat. Cook over medium-low heat, stirring occasionally, until soft and golden brown, about 10 minutes. If the pan gets dry, add a splash of water.

Drain the potatoes and return to the pot. Add the 2 tbsp butter, 0.25 cup milk, and 0.5 tsp salt. Mash until smooth and creamy.
