Ingredients
- 1.25 lb pork shoulder, cut into 1-inch cubes
- 4 cups collard greens or kale, chopped
- ½ cup cassava flour (farofa)
- 3 tbsp neutral cooking oil
- 3 cloves garlic, minced
- 1 whole lime

Pat the pork dry with paper towels. Season generously with salt and black pepper on all sides.

Heat oil in a large skillet over medium-high until it shimmers, about 2 minutes.

Working in batches, add pork cubes without crowding. Sear 4–5 minutes until golden brown on all sides, stirring occasionally. Set aside.

In the same skillet, add garlic and cook 30 seconds until fragrant, then add greens with a pinch of salt.

Stir greens 3–4 minutes until wilted and tender. Return pork to the skillet and toss to combine.

Toast cassava flour in a dry skillet over medium heat for 2–3 minutes until golden and fragrant. Squeeze lime juice over the pork, then serve with the farofa on the side.
