Ingredients
- 2 lbs pork shoulder, cubed
- 1 whole yellow onion, halved
- 6 cloves garlic cloves
- 2 tsp salt
- ½ tsp black pepper
- 1 tsp cumin
- 1 cup all-purpose flour
- 2 whole egg
- 3 cups vegetable oil, for frying
- ¼ cup fresh cilantro, chopped

Place cubed pork, onion, and garlic in a large pot. Cover with water and bring to boil.

Add salt, pepper, and cumin. Reduce heat and simmer for 45 minutes until pork is tender.

Drain pork, discard onion and garlic. Let cool slightly, then shred with two forks into bite-sized pieces.

Beat eggs in a shallow bowl. Place flour in another shallow bowl.

Form shredded pork into 2-inch oblong patties, pressing firmly so they hold together.

Dip each patty in egg, then coat thoroughly with flour. Set on a plate.

Heat oil to 350°F in a deep fryer or large pot. Test with a wooden spoon—bubbles should form immediately.

Fry patties in batches for 3-4 minutes until golden brown on both sides. Do not crowd the pan.

Transfer to paper towels to drain. Serve hot, garnished with fresh cilantro.
