Ingredients
- 14 oz firm tofu
- 8 oz cremini or shiitake mushrooms
- 2 tbsp chili crisp or sambal oelek
- 2 tbsp soy sauce
- 1 tbsp rice vinegar or white vinegar
- ½ tsp Sichuan peppercorns, ground (or black pepper)
- 2 stalks scallions, sliced thin

Press tofu between paper towels for 1 minute to remove excess moisture, then cut into 3/4-inch cubes.

Slice mushrooms into bite-sized pieces. Mince or thinly slice garlic (about 1 tbsp total).

Heat 2 tbsp oil in a large skillet over medium-high until shimmering, about 1 minute.

Add mushrooms and cook, stirring occasionally, until golden brown and liquid evaporates, 5–6 minutes.

Stir in garlic, then chili crisp. Cook 30 seconds until fragrant, then add soy sauce, vinegar, and 1/3 cup water.

Gently fold in tofu cubes and Sichuan pepper. Simmer 2 minutes without stirring so tofu doesn't break.

Taste and adjust seasoning. Serve hot over rice, garnished with scallions.
