  • 1.5 cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1.25 cups milk
  • 1 large egg
  • 2 tablespoons butter
  • 1 cup mango
  • 2 scoops vanilla ice cream

    In a large bowl, whisk together the 1.5 cups flour, 2 tsp baking powder, and 0.5 tsp salt. Make a well in the center.

    In a separate bowl, beat the 1 egg, then whisk in the 1.25 cups milk and 2 tbsp melted butter until combined.

    Pour the wet ingredients into the dry and stir until just combined; a few lumps are fine. Let the batter rest for 5 minutes.

    Heat a lightly greased skillet over medium heat. Pour 1/4 cup batter per pancake and cook until bubbles form on top, about 2-3 minutes.
