Mango Habanero Salsa

Ingredients
- 2 medium ripe mangoes
- 1 whole habanero peppers
- ¼ medium red onion
- ¼ cup, packed fresh cilantro
- 1 whole lime
- ½ tsp salt
- ¼ tsp black pepper

Char the habanero over an open flame or under the broiler, turning with tongs, until blackened all over, ~2 minutes.

Let the habanero cool, then remove the stem and most of the seeds (leave some for heat). Dice finely into a bowl.

Peel and pit the mangoes. Cut the flesh into small 1/4-inch dice and add to the bowl.

Mince the red onion finely and add to the bowl along with the cilantro.

Squeeze the lime juice over everything. Add salt and pepper, then fold gently to combine.

Taste and adjust lime, salt, or habanero heat. Serve alongside grilled chicken, sweet potatoes, and zucchini.
