Ingredients
- 1.5 cups coconut milk
- ½ cup heavy cream
- ¼ cup sugar
- 1 tbsp gelatin powder
- 2 tbsp water
- 1 large mango
- ½ medium lime
- 4 leaves mint leaves

In a small bowl, sprinkle 1 tbsp gelatin over 2 tbsp water and let stand for 5 minutes until spongy.

In a saucepan, combine 1.5 cups coconut milk, 0.5 cup heavy cream, and 0.25 cup sugar. Heat over medium, stirring, until sugar dissolves and mixture is hot but not boiling, about 5 minutes.

Remove from heat and stir in the softened gelatin until completely dissolved. Let cool slightly, about 10 minutes.

Pour the mixture into 4 serving glasses or ramekins. Refrigerate until set, at least 4 hours or overnight.

Peel and dice 1 large mango. Blend with juice of 0.5 lime until smooth, about 1 minute.
