Ingredients

  • ¾ lb ground lamb
  • 1.5 cups long-grain white rice (or basmati)
  • 2 cups fresh green beans, cut into 1-inch pieces
  • 1 medium yellow onion, diced
  • 1 medium tomato, diced (or halved cherry tomatoes for garnish)
  • ½ tsp turmeric
  • ½ tsp cumin

Instructions

    Bring 3 cups salted water to a boil in a large skillet over high heat.

    Stir in rice, reduce heat to low, cover, and cook for 15 minutes until water absorbs and rice is tender.

    Meanwhile, brown lamb in a second skillet over medium-high, breaking it into small pieces, until no pink remains, ~5 minutes.

    Add diced onion, turmeric, and cumin to the lamb. Stir and cook until fragrant, ~60 seconds.

    Stir in green beans and diced tomato, cook until beans are tender, ~3 minutes.

    Fluff rice with a fork, fold in the lamb mixture, and serve warm.
