Ingredients
- 2 whole lobster tails
- 2 cups mixed fresh herbs (such as parsley, arugula, or dill)
- 1 whole lemon
- 3 tbsp olive oil
- 2 tbsp butter
- ½ tsp salt

Cut the 2 lobster tails in half lengthwise with kitchen shears. Brush the cut sides with 1 tbsp olive oil and season with 0.25 tsp salt.

Heat a skillet over medium-high. Place the lobster tails cut-side down and cook until the meat is opaque and lightly charred, about 4-5 minutes. Flip and cook 1-2 minutes more until just cooked through.

In a small bowl, whisk the remaining 2 tbsp olive oil, the juice of 0.5 lemon, and 0.25 tsp salt to make the dressing.

Toss the 2 cups herbs with the dressing. Serve the lobster tails with the herb salad, lemon wedges from the remaining 0.5 lemon, and a small ramekin of melted butter for dipping.

For the dipping sauce, melt the 2 tbsp butter in the microwave or a small pan until just melted, about 30 seconds.
