Ingredients
- 12 oz pork shoulder, boneless, cut into 1/2-inch cubes
- 1.5 lb potatoes (russet or yukon gold)
- 4 cups chicken broth
- ½ cup heavy cream
- 1 cup sharp cheddar, shredded
- 1 medium onion, diced
- 2 tbsp fresh chives, chopped (or parsley)

Cut potatoes into 3/4-inch cubes. Dice onion. Chop chives.

Heat 1 tbsp olive oil in a large pot over medium-high until shimmering, about 90 seconds.

Add pork cubes, season with salt and pepper. Cook, stirring occasionally, until browned on all sides, 6–7 minutes.

Stir in diced onion, cook 2 minutes until softened and fragrant.

Pour in broth and add potato cubes. Bring to a boil, then reduce heat and simmer 12 minutes until potatoes are tender.
