Ingredients

  • 4 large egg whites
  • 2 oz sliced ham
  • 1 tbsp butter
  • 2 slices whole-wheat bread
  • 1 medium, sliced tomatoes
  • ½ cup, cut into sticks cucumber

Instructions

  1. 1

Toast bread while you cook. Heat a nonstick 8-inch skillet over medium with 0.5 tbsp butter.

  2. 2

Whisk egg whites with a pinch of salt and pepper until foamy, about 20 seconds.

  3. 3

Pour eggs into the skillet. Tilt and swirl until the bottom just sets, about 90 seconds.

  4. 4

Add ham to one half. Fold the omelette in half when the edges look set but the center still jiggles slightly.

  5. 5

Slide onto a plate. Butter the warm toast, then arrange tomato slices, cucumber sticks, and sprouts alongside.
