Ingredients
- 1 cup barley
- ½ cup lentils
- 1 medium carrot
- ½ medium onion
- 3 cups vegetable broth
- 1 tablespoon olive oil

Rinse the 1 cup barley and 0.5 cup lentils under cold water. Finely dice the 0.5 onion and 1 carrot.

Heat 1 tbsp olive oil in a pot over medium. Add the onion and carrot, cook until softened, about 5 minutes.

Stir in the barley and lentils, then pour in 3 cups vegetable broth. Bring to a boil.

Reduce heat to low, cover, and simmer until grains are tender and liquid is absorbed, about 20 minutes.
