Ingredients
- 2 cups quinoa, cooked and cooled
- 1 cup cherry tomatoes, halved
- 1 medium cucumber, diced
- ⅓ cup red onion, finely diced
- ½ cup fresh parsley and dill, chopped
- 1 whole lemon, juiced
- 3 tbsp olive oil
- 1 to taste salt and pepper

If cooking quinoa fresh: bring 1 cup quinoa and 2 cups water to a boil, reduce heat, cover, and simmer 15 minutes until fluffy. Fluff with a fork and cool.

Whisk lemon juice and olive oil together in a small bowl. Season with salt and pepper to taste.

Add cooled quinoa, tomatoes, cucumber, red onion, and herbs to a large bowl.

Pour dressing over salad and toss gently until everything is coated.

Taste and adjust salt, pepper, or lemon juice as desired. Serve immediately or chill.
