Lemon Garlic Shrimp with Orzo

Ingredients

  • 300 g large shrimp, peeled
  • 180 g orzo pasta
  • 80 g baby spinach
  • 60 g feta cheese
  • 50 g kalamata olives
  • 1 piece lemon
  • 4 piece garlic cloves
  • 3 tbsp dry white wine
  • 3 tbsp olive oil
  • 2 tbsp fresh dill
  • ½ tsp salt

Instructions

    Cook orzo in generously salted boiling water until just al dente. Drain and toss with 1 tbsp olive oil. Set aside.

    Heat remaining olive oil in a wide pan over medium-high heat. Sauté shrimp 90 seconds per side until pink. Remove.

    Add garlic to the pan, cook 30 seconds. Deglaze with white wine, add lemon juice and zest. Simmer 1 minute.

    Add orzo and spinach to the pan, toss until spinach wilts. Return shrimp. Top with olives, feta, and dill.
