Ingredients
- 1.5 cups rolled oats
- 2 large eggs
- ¾ cup milk
- 1 whole (zested + juiced) lemon
- 1 cup blueberries, fresh
- ½ cup blackberries, fresh
- 2 tbsp honey or maple syrup

Preheat oven to 350°F. Whisk together oats, eggs, milk, lemon zest, lemon juice, and honey until fully combined.

Fold in blueberries and blackberries gently, reserving a handful for topping.

Divide mixture between two 8-oz ramekins or a small baking dish. Top with reserved berries.

Bake for 12–14 minutes until the top is set but the center still jiggles slightly when shaken.

While baking, simmer remaining blackberries with 1 tbsp honey in a small saucepan until syrupy, ~3 minutes.
