Ingredients

  • ¾ lb lamb, thinly sliced or ground
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 1 tsp each cumin, paprika, black pepper, salt
  • 1 whole lemon, halved
  • 4 pieces pita bread
  • 1 cup total tomato, cucumber, fresh parsley (chopped)

Instructions

    Heat 2 tbsp olive oil in a 10-inch skillet over medium-high until shimmering.

    Add lamb, breaking it into small pieces. Cook without stirring 2 minutes until browned.

    Stir in onion. Cook 3 minutes, stirring occasionally, until onion softens.

    Add garlic, cumin, paprika, salt, and pepper. Stir and cook 1 minute until fragrant.

    Squeeze half the lemon over the lamb. Taste and adjust salt and spices.

    Warm pita in the same skillet 30 seconds per side until soft and pliable.

    Divide lamb mixture among pita. Top with tomato, cucumber, and parsley.

    Serve immediately with remaining lemon wedge for squeezing.
