Ingredients
- 1 lb lamb, diced into 1-inch cubes
- 1.5 cups long-grain rice (basmati or jasmine)
- 1 medium onion, sliced thin
- 1 tsp ground cumin
- ¾ cup plain yogurt
- ½ unit lemon, juiced

Heat 2 tbsp oil in a heavy pot over medium-high heat until shimmering, about 90 seconds.

Add diced lamb in a single layer. Sear 2 minutes without stirring, until browned on one side.

Stir in sliced onion and cumin. Cook 2 minutes until onion softens and cumin becomes fragrant.

Add rice and stir to coat with oil, about 1 minute. Pour in 3 cups water and a large pinch of salt.

Bring to a boil, then cover and reduce heat to low. Simmer 12 minutes until rice absorbs water and lamb is tender.

Whisk yogurt with lemon juice and a pinch of salt. Fluff rice with a fork and serve topped with yogurt sauce.
