Ingredients
- 1.5 lb lamb leg or shoulder, cut into 1-inch cubes
- ½ cup plain yogurt
- 2 tbsp lemon juice
- 3 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1 tsp salt
- ½ tsp black pepper
Instructions
- 1
In a large bowl, whisk together the 0.5 cup yogurt, 2 tbsp lemon juice, 3 minced garlic cloves, 1 tsp cumin, 1 tsp smoked paprika, 1 tsp salt, and 0.5 tsp black pepper until smooth.
- 2
Add the 1.5 lb lamb cubes to the marinade and toss to coat evenly. Cover and let marinate at room temperature for 15 minutes, or up to 2 hours in the fridge for deeper flavor.
- 3
Preheat your grill to medium-high heat (about 400°F). If using wooden skewers, soak them in water for 20 minutes first.
- 4
Thread the lamb cubes onto skewers, leaving a small gap between pieces so they cook evenly. Discard any leftover marinade.
- 5
Grill the skewers for 8-10 minutes, turning every 2-3 minutes, until the lamb is charred on the outside and reaches your desired doneness (about 135°F for medium-rare).
- 6
Remove from the grill and let rest for 5 minutes before serving. The lamb should be juicy and slightly pink inside if you like it medium-rare.
