Ingredients
- ¾ lb lamb shoulder, thinly sliced (¼-inch or thinner)
- ¾ cup Greek yogurt
- 1 whole lemon (juiced)
- 3 clove garlic, minced
- 1.5 tsp dried oregano
- 4 whole pita bread
- 1 medium tomato, diced
- ½ medium red onion, thinly sliced

Stir yogurt, lemon juice, 1 minced garlic clove, and salt until combined. Set aside.

Toss lamb with oregano, remaining garlic, salt, and pepper in a bowl.

Heat olive oil in a large skillet over medium-high until it shimmers, ~90 seconds.

Add lamb in a single layer and cook without stirring for 3 minutes until edges brown.

Stir and cook another 2 minutes until lamb is cooked through and crispy, ~165°F.

Warm pita on a dry skillet or over a flame for 15 seconds per side until pliable.

Spread 2 tbsp yogurt sauce inside each pita.
