Ingredients

  • ½ lb ground lamb
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 tbsp curry powder
  • 1 can (14 oz) canned diced tomatoes
  • 2 whole round bread rolls or naan

Instructions

  1. 1

Heat olive oil in a 10-inch skillet over medium-high. Add onion and cook, stirring, until softened, ~3 minutes.

  2. 2

Add garlic and curry powder, stir constantly for 30 seconds until fragrant—don't let it burn.

  3. 3

Add ground lamb, break it up with a spoon, and cook until browned with no pink, ~5 minutes.

  4. 4

Pour in the canned tomatoes with their juice. Simmer for 5 minutes, stirring occasionally, until sauce thickens.

  5. 5

Slice the top off each bread roll and scoop out the interior, leaving a 1/2-inch shell.

  6. 6

Spoon the curry into each hollowed roll. Serve hot with the scooped bread on the side for dipping.
