Ingredients
- 1 lb ground lamb
- 1 cup yellow rice
- 4 cups mixed greens
- ½ cup feta cheese
- ½ cup plain yogurt
- 2 tbsp olive oil
- 1 tsp ground cumin
- ½ tsp salt

Cook the 1 cup yellow rice according to package directions until fluffy, about 15-20 minutes. Set aside to cool slightly.

Heat 2 tbsp olive oil in a large skillet over medium-high heat. Add 1 lb ground lamb and cook, breaking it up, until browned and cooked through, about 8-10 minutes.

Stir 1 tsp ground cumin and 0.5 tsp salt into the lamb. Cook for 1 minute until fragrant. Remove from heat.
