Ingredients

  • 2 cups all-purpose flour
  • ¾ cup warm water
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • ½ teaspoon instant yeast
  • 1 pound ground beef
  • ½ medium onion, finely minced
  • 3 tablespoons tomato paste
  • 3 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • ½ teaspoon red pepper flakes
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons olive oil
  • ¼ cup fresh parsley, chopped
  • 1 tablespoon lemon juice

Instructions

    In a large bowl, combine flour and salt. Create a well in the center and add warm water, olive oil, and yeast.

    Mix until a shaggy dough forms, then knead for 8-10 minutes until smooth and elastic.

    Cover with a damp towel and let rise for 20 minutes.

    Heat 2 tablespoons olive oil in a large skillet over medium heat. Add minced onion and cook for 2 minutes until softened.

    Add minced garlic and cook for 30 seconds until fragrant.

    Add ground beef and cook, breaking it apart with a spoon, for 5-7 minutes until no longer pink.

    Stir in tomato paste, cumin, paprika, red pepper flakes, salt, and black pepper. Cook for 2 minutes.

    Remove from heat and let cool slightly. Stir in fresh parsley and lemon juice.

    Divide dough into 4 equal portions. On a floured surface, stretch each portion into a thin oval about 8x5 inches.

    Heat a 12-inch cast iron skillet or griddle over medium-high heat.

    Place one dough oval on the hot skillet and cook for 2 minutes until lightly golden.

    Flip the dough and cook the other side for 1 minute. Flip back again.

    Spread a thin layer of meat mixture over the cooked side (about 3-4 tablespoons), leaving a small border.

    Cook for 2-3 minutes until the meat is slightly crispy and the dough is golden. Transfer to a plate.

    Repeat with remaining dough and meat mixture. Serve hot, optionally with lemon wedges and additional fresh herbs.
