Ingredients
- ⅓ cup soy sauce
- 2 tbsp brown sugar
- ¼ medium Asian pear or apple, grated
- 1 tbsp sesame oil
- ½ tbsp ginger, minced
- 1.25 lb pork shoulder or ribeye chops, boneless
- 2 stalks scallions, chopped, + sesame seeds

Whisk soy sauce, brown sugar, grated pear, sesame oil, ginger, and garlic in a bowl until sugar dissolves.

Pat pork chops dry. Score the fat in a cross-hatch pattern with a knife.

Add pork to the marinade, turning to coat. Let sit while you heat the skillet, ~5 minutes.

Heat a heavy skillet over medium-high until it shimmers. Remove pork from marinade, shaking off excess.

Sear pork 2–3 minutes per side without moving until edges caramelize and center is barely pink.
