Ingredients

  • ⅓ cup soy sauce
  • 2 tbsp brown sugar
  • ¼ medium Asian pear or apple, grated
  • 1 tbsp sesame oil
  • ½ tbsp ginger, minced
  • 1.25 lb pork shoulder or ribeye chops, boneless
  • 2 stalks scallions, chopped, + sesame seeds

Instructions

    Whisk soy sauce, brown sugar, grated pear, sesame oil, ginger, and garlic in a bowl until sugar dissolves.

    Pat pork chops dry. Score the fat in a cross-hatch pattern with a knife.

    Add pork to the marinade, turning to coat. Let sit while you heat the skillet, ~5 minutes.

    Heat a heavy skillet over medium-high until it shimmers. Remove pork from marinade, shaking off excess.

    Sear pork 2–3 minutes per side without moving until edges caramelize and center is barely pink.

    Scatter scallions and sesame seeds over the top. Serve immediately with rice or steamed vegetables.
